Is your watch an LTE model?

If it is, that's your answer. It's an LTE model it has an esim

Yes and if I'm not connected to my phone I can make calls. It asks do I want to use model network. But when It rings it doesn't show up on phone until I answer it.

Well, that's why it rings when your phone dies.  An LTE version with a phone number pairing will get calls when someone dials your phone number, whether your phone is off, dead battery or you are out of range of it.  If the phone is off and your number is dialed, the watch will receive the call.  If you didn't have an LTE watch, the call would go straight to VM if the phone was unable to be answered.
