Can't set default message notification sound

You used to be able to have a specific sound for incoming texts. For the life of me, I can't find a way to do it now. I have turned on Manage notification categories for each app and that seems to have done a whole lot of nothing. Does anyone have a solution? Or am I stuck going into each individual contact and setting the sound, which does no good when I get a message from someone who's not a contact.

Long-press the messages app icon.
Click Notifications
Click Notification Categories
Click New Messages
Click Sound
Pick Sound

Thanks! It's slightly different on mine (there's like a dozen different switches), but that got me in the right direction.
