I downloaded a few photo editing app. Hugh mistake. It's taken over my phone!! How can I stop this??

Go into Safe Mode and then uninstall the apps 

To put a Samsung Galaxy S23 into Safe mode, you can press and hold the Side and Volume down buttons at the same time
 
Steps to enable Safe mode 
 
    1. Press and hold the Side and Volume down buttons simultaneously
    2. Touch and hold the Power off icon
    3. Tap the Safe mode icon
  • The phone will automatically reboot into Safe mode

After you follow @GaryB82s advice and uninstall the apps and boot normally, make sure app protection is on in your settings and run a scan and/or download malwarebytes and run a scan to make sure no other malware is left hanging around.
