You chose to update it. It was not forced on you.

I can not stand this new update. I do not want an iPhone and the features make user ability so much harder. Hate it!

I do not like this "update" either. Why not a choice in weather icons. Much prefer the transparent one. Also search should be on home screen - big NO NO there. What other unwelcome and unmasked for changes do I have in store for me? These were obvious instantly...

Every software release will have bugs. iOS always has bugs, and Apple does a good job of addressing and patching them; the same is true for Android. I personally think One UI 7 is a very polished update, with a few lingering bugs that Samsung will likely address. When it comes to any device, the end user controls various settings and aspects. No upgrade or update is ever forced upon a user; you did not have to install this upgrade. Many people I know wait a couple of weeks or months to update their OSes for performance-related reasons. I suggest turning off auto-updates and always manually reviewing and installing anything in the future. It is commonly known that when setting up any device, there will always be future software upgrades.
