Galaxy WatchYou should be able to uninstall the watch 5 manager in your phone settings. Settings/apps/Galaxy watch 5 manager. My picture below shows the watch 7 manager, but no reason the watch 5 manager should not appear for you. If you choose to keep the app, but don't want it running, go to the background usage settings (settings/battery/background usage limits, select deep sleeping apps and add it to the deep sleeping app list.) It will remain on your phone, but it will not run in the background. PS: my watch manager never runs in the background, perhaps because my watch is connected. Maybe yours runs in the background because it is looking for the watch you no longer use.
Incidentally, did you remove the watch from the wear app or just stop wearing it? If you removed the watch properly, the watch manager should have uninstalled itself.
