I've tried searching for this but all I could find is that the sleep tracking is fixed on the new watches. Not in my case though.

Galaxy WatchIf there was a sleep graph to share, I would have shared it. Yes, I know I can see it on my watch. Problem is, it won't sync to my phone. It just infinitely loads, on my watch, and doesnt show up at all on my phone, making it appear as though I didn't use sleep tracking function at all.

Galaxy WatchHave you tried a) restarting the watch? b) clearing the watch's cache partition? c) clearing the cache from the health app? d) restarting the phone? Do you have the latest version of the health app? Is the watch still connected to the phone? On wi-fi, on the same network as the phone?
I guess your watch has not yet updated to OneUI8, because the sleep tile in OneUI8 no longer looks like that.

Galaxy WatchJust to let you know, you don't have to place your wrist in such an awkward position to take a photo with your phone. You can take a screenshot on the watch by pressing the home and back buttons simultaneously. The screen shot will appear in your gallery on the phone (and the gallery on the watch).
