Galaxy Watch series devices: Sleep Tracking Issue with latency and deep sleep not recording

I've tried searching for this but all I could find is that the sleep tracking is fixed on the new watches. Not in my case though.

 
I have an S24 Ultra (not sure if that even matters) and the new Galaxy Watch 8 Classic.
 
On May 30th, I updated the Samsung Health app on my old Galaxy Watch 7. Since then my sleep has not recorded right. I experience gaps and the sleep tracking ends before I'm awake.
 
It seems like this wouldn't be a hardware issue since it started on my Watch 7 and has continued to the Watch 8, but here's a list of things I've tried:
- Cleared cache for all health apps on both the phone and watch
- Factory reset on Watch 8 (twice)
- Uninstalled and reinstalled Samsung Heath on both the phone and watch
- Turned on then off any battery/power saving modes (also set apps to "unrestricted")
- Set heart rate to measure constantly
- Turning sleep mode on both manually and using a schedule
 
Tech support said I may have to send the watch in for repair, but I've had it for less than 2 weeks so that seems ridiculous. Any help would be greatly appreciated!

How about you?  Did this occur after and update or just out of the blue?  Try clearing the watch cache partition.  You can't expect help if you give no details.

After the update since my sister's watch that did not installed the update still recorded the sleep fine

Is your watch too loose or too tight?  If you cleared the cache and ran a diagnostic on the watch sensors, your only option may be to do a factory reset and restore your backup.  Does your sister have the same watch?  The watch4 is older now and may not handle the update as well as newer watches.

  • Galaxy watch 4 classic/samsung health isn't tracking slightly fragmented sleep? I was woken up for about 30 minutes at some point during the night, and I can see the different sleep sessions on my watch, but no further breakdown of sleep data in the samsung health application. Can I fix this?

What do you mean?  You did not include your sleep graph or other statistics.  Take a screen shot of the sleep page in the phone app.  It clearly shows a break in your sleep cycle, so what other sleep statistics are you wanting to see?  If you tap the sleep tile and scroll up, you will see the graph and breakdown, but it is much easier to see and analyze on the phone.
