How make Hey google open on watch instead of on phone?

I can't seem to find it in either devices settings.

Google assistant would have been preinstalled on your watch. You have to find the app icon in the apps list and set it up. The assistant icon may have been replaced by the Gemini icon

Both that and Gemini are installed on watch
