This is driving me crazy. Before when wifi was on data would not be used and the data icon would disappear only to come back if wifi was on. Now I see even when wifi is on the darn data is still on. All my plans data has been already used and I haven't even left my house.

Galaxy S25First check that the "Allow individual apps to switch" is not toggled on in settings/connections/network exceptions (2nd one). If that is toggled on, then turn it off. If that does not work, then...
Try resetting your mobile network in Settings/general management/reset, then reset the mobile network settings. After that is done, and all reconnected, set the phone to airplane mode, that will help clear things out. Then power down your device, then press and hold both the up volume and the side (power) buttons at the time until you see the recovery screen. When there using the volume buttons to move the highlight up or down, move it over "Wipe cache partition", press the side button, then use the volume button to highlight "Yes" , the press the side button again, then again (it will be highlighting "Reboot system now"), then it will start normally.
Also, your intuition of seeing the the 5G icon is that your device is connected to the mobile network and using that as the primary connection is correct. It should not show when Wi-Fi is detected and confirmed working. The bars do not indicate a mobile connection, that is the device detecting available network expressed in signal strength.

Galaxy S25Take a look at my screenshot. My phone currently has no SIM and is on WiFi, but the mobile data indicator is still displayed. I can guarantee it's not using mobile data.
If your data is being consumed too fast, you may have background processes or a rogue app transmitting data when connected to your mobile network.

Galaxy S25Also what has background process has to do with connection being pulled from my data instead of the wifi? I've been home past 2 days full on WiFi. I don't get why a background app suck as YouTube or FB or what not is pulling from my cell data

Galaxy S25You said you were at home for two days. You didn't leave home once? Do you know for certain that your WiFi was connected the entire time? Is it possible that you could've lost WiFi and unknowingly connected to mobile data?
You could toggle off mobile data when connected to WiFi and compare your usage over the next couple weeks.

Galaxy S25Wifi is always on, I never turn it off and no, no outage or tv would have been gone, etc.
This is totally weird. I never ever had both wifi and cell data show simultaneously on the top right corner
