Galaxy S25I feel you. Just so you know, you can change the calendar settings to keep the time zone you set, regardless of your phone's time zone. So, if your time/date settings slip back to automatic, you can still keep your appointments straight.
If you use Samsung calendar, open the side menu and tap the settings gear. Scroll down to "lock time zone" and slide it on and set your time zone. If you use Google calendar, open the side menu and scroll down to settings, select "general" and slide off "use device time zone" and then set your desired time zone. If you use any other calendar, look for similar settings, I am sure they all have it.
In addition, you can also use the "roaming clock" on your lock screen, so when you cross time zones, you always know your home zone time. You can also use the dual clock widget on your home screen and set NY as the home city (for EST), and the other clock will show the time zone you are in. Not perfect workarounds, but if you have a carrier that keeps setting you back to automatic time (and I know it's the carrier's doing, that's why I asked if you had T-Mo), then it works.
The only other way I have found to keep your time settings at manual is to keep the phone in airplane mode and only use wi-fi calling - not always practical if not connected to a wi-fi node.

Galaxy S25There is nothing wrong with having auto date and time. Some people need to have manual time sets and some carriers just turn the setting back on to auto, and it really messes things up.

Galaxy S25if you mean "routine reset" like a reboot you do every week or so, make a routine with macrodroid to change it back upon each restart. your first party settings should persist through a reboot though

Galaxy S25There is really no choice unless the carriers allows exceptions. Just do not reboot after making the changes. If you need to reboot for reasons of software updates, maintaining smooth phone functionality or to clear the system cache, etc, just toggle it back off again. There are certain brands that do not on a system wide function, change the settings back even after a reboot. IIRC, Apple does not do this at all regardless of the carrier. Samsung is fairly singular in not letting total user control over this.
