Does anyone know how to change the task to a slim list on the Galaxy S25 Ultra?

I couldn't get Home Up to work in GoodLock so I used Home Up in FineLock for Samsung.

Home up is integrated in phone pinch screen to see widgets select settings scroll down and click more customizations and you'll see home up

You need the new version of Home Up (link to APK at the bottom it is safe) once you download and install Home Up go to Phone Settings Home Screen scroll all the way to the bottom on tap More Customizations

You can't until the first update rolls out which will include support for the new version of home up.

As a workaround you can download the beta version of Home Up from APK mirror. Just be aware that this could cause issues but some people have done it on reddit and had good results so far.
