When I have 2 Bluetooth devices connected (smart watch, earbuds) and I'm on a call the Bluetooth keeps jumping from the device I've chosen to talk on to the other. How do I stop this from happening or is there a way? Thanks

None of this constitutes a resolution. It is idiotic that the phone would interrupt a bluetooth call in progress and connect to a newly discovered Bluetooth device. I was hoping that Android 15 would contain a fix for this, but apparently not. ๐Ÿ™„

This is deliberate programming for calls.  Let's say you get a call while connected to your car, then you get to your destination and it's time to get out of the car, the call automatically switches back to your phone/watch.  The same is true in reverse. If you are on a call when you enter your vehicle, it's assumed you want to continue on the car's speaker for hands free driving.  PS. Anything that solves your immediate problem is a fix. Even if it's not *Samsung's* fix.  There are many ways up a mountain. Now, there may be a setting somewhere, but I don't care to go searching for it, and apparently the OP did and didn't find it.  If you are having this issue, may I suggest a Google search to see if we are all missing the setting?

I already went searching for an option to change this, both online & in my phone settings, and couldn't find one. I understand the scenario you're presenting (thanks!) but that's not my scenario. My scenario is that my wife is on a call using her Bluetooth headset, I turn on the car not even realizing what will happen, and suddenly I've intercepted my wife's caller and my wife is disconnected. All I'm seeking is an option to change this behavior, and there clearly isn't one - nor is there any other workaround that I can figure out.

Still a programing implementation - by design.  I think in older Android versions there was an option to keep the call limited to the device it was initiated on, but it was changed in later Android versions. I could be wrong, but since I seem to remember it on one of my older phones (not Samsung), I would think it would be a Google/Android decision to just make automatic switching the default.  If it didn't make an automatic switch, if you took your earbuds out or the battery died on your headset, the call would disconnect rather than returning to the phone.  The device hopping only happens with phone calls.

As for your wife being on a call and being intercepted by the car, if both devices are paired to the car, the person who gets in the car first gets paired first.  In the car's BT settings (at least in my car) I can set the connection priority for the device.  So, presumably, if my device is designated the priority connection, it will connect first if two paired devices were in the car at the same time when the car was started.  Only one device, as you know can be connected at a time. Even with priority connection set, the phone that gets into the car first is the one that gets connected, as neither the car nor the phone knows the priority device is coming.  I have both my watch and phone paired, so I set the phone as priority and the phone always connects to the car and the watch only connects if I leave the phone home. So, if your wife is on a phone call when getting into the car, tell her to wait until you get in and start it, or toss your phone on the seat before opening the door for her.

My wife is not getting into the car. My phone's Bluetooth is off, so my phone is not involved. She's in the house on a call with a headset already paired. I'm getting in the car to just go somewhere. My turning on the car wrecks her call.

Because she is on BT range of the car. If your car is in the driveway or garage, this can happen. Inconvenient for sure, but is there a possibility of her moving out of BT range when you are leaving the house?

No there is not. I am not going to leave the car outside in the weather just for this. Based on my experience with our phones' range, I'd have to park it half a block away. The easier workaround would be to just turn the car Bluetooth off, but that would then require that my wife knows how to turn it on when she wants it. That's probably what we'll end up doing.
