Any way to just delete the AI core out of the phone?

looking at getting a new Samsung but everything new has AI built into it into it and i just do not want that.  Work gave me an S25 as a work phone not long ago and it's not bad, but even after disabling a ton of stuff there's some AI things that the phone won't let me disable, to say nothing of the background processes. and having that on a work phone is one thing but my personal phone is another matter. I'm hoping there's a way i can just go for the source because otherwise I'm going to be stuck doing something like wiping a phone and installing a linux OS then customizing from there instead of just doing a quick transfer to get what I'm wanting

You will have to do what you described, and you will have to do it on a Pixel 9 lower.

To the best of my knowledge, that is not possible on a Samsung Phone.

Galaxy AI is deeply integrated into One UI. There is no getting rid of it completely. You don't have to use the features if you don't find them useful, and they are generally unobtrusive in daily use.

If you absolutely do not want a phone with AI features, your options are pretty limited in the current market. You could find some way to install a custom OS on a flagship device (not recommended, kiss your warranty goodbye) or you could purchase a lower end device that does not have all of the flagship features. Samsung offers several lower end A series devices that do not have Galaxy AI.

are there any that have better specs than an S20  FE and have an SD card slot? i really just do not want the AI features there. to me it just looks like a giant point of failure if something goes wrong. i can choose to not use the features but it's still rooted throughout the phone and if the AI malfunctions,  what's to stop it from deleting things, or sending scam texts if a virus gets into it? and even then, i just do not trust something as advanced as AI system that's locked in place by a corporation.

Knox prevents most threats like this at a hardware level. Galaxy AI also performs as many tasks on-device as possible to further reduce risk. With features like auto blocker things like this are a lesser concern unless you are sideloading apks, etc.

You are going to be hard pressed to find a Samsung device that has all of the things you are asking for AND Flagship specs. Your choices are
A) Flagship Specs + AI present + No SD Card slot
B) Low end specs + Minimal AI + SD Card Slot

There is currently no modern Samsung device I am aware of that gives you all 3.

is knox a built in security or is it a subscription i have to pay for? and is there any apps to lock down or quarantine the AI system? i still just do not like the idea of something external that can act autonomously to a degree, located so deep in my personal space, especially when samsung or google can very easily program their AI to act as spyware or worse, regardless of what i agree to

if nothing else, i may just upgrade from an s20 to an s20 ultra for the better processor and hope that fixes thing

You don't have to pay for Knox. It's essentially a mulit-layered software/hardware partition in Samsung devices that prevents private info and core device functions from being impacted if there is malware by physically separating those portions from the main chip and acting in real time to isolate a threat if one is detected. Knox is a baked in feature that makes Samsung devices some of the most secure on the market in terms of malware protection. This protection is substantial enough that Knox enterprise is used by governments and private entities that deal with sensitive data.

Galaxy AI can't act autonomously in the way you described. It is a very, very limited set of tools that only operate when you enable and activate them. These tools don't have access to things like passwords and cannot co-opt basic functions of the phone like sending messages or making calls. The way Android works, you would have to grant permissions in order for these things to access those functions.

In other words, AI features ARE essentially "quarantined" into their respective apps and can't interact with core functions of the phone unless you specifically allow it.
