Since this last update to UI6 l, has anybody else not been able to change the notification for google messages, and several other apps?

If you're talking about notification sounds for each app:

⁃   Settings  ≻
⁃   Notifications  ≻
⁃   Advanced Settings  ≻
⁃   Turn "Manage Notification
     Categories for Each App" On .

This issue comes up here several times every month. Samsung needs to have notification categories for each app enabled by default.

It was on before. Samsung changed it with UI 6.1 turning it off by default.
