How do I change my phone to stop going to the homescreen after each time the screen timesout?

Settings > Display > Screen timeout > choose your preference.

Right I've done that. It doesn't stop from closing out whatever app I was on previously.

Does it happen with all the apps?

Yes it happens on any app, it used to not ever do that to me

Well, if this is recent behavior, I suggest clearing the cache partition on the phone.  Some leftover bits and pieces may be interfering.
