Super slo-mo typically fires when motion enters the frame. Then it lasts only for a set time and then goes back to normal speed.
Have you tried clicking the pencil to edit the video? I'm not sure if the S8 has the ability or not, but on my Note 20 Ultra the editor allows you to change which part of the video is in slo-mo.
