Fold & Flip PhonesHaving your contacts off the sim makes it much easier to transition to a new phone. Keeping your contacts in Google contacts not only makes it easier to use on all your devices, but you can also access them from anywhere you have web access. Keeping them on an e-sim, especially, they will disappear when the e-sim is no longer active. Transferring them to your device makes them accessible only on that device.
It's actually not 2 steps back, it is forward looking toward making the user experience easier.

Fold & Flip PhonesWell, your carrier doesn't want your contacts on the e-sim, so find an alternative. Also, not wanting to use Google on a Google owned operating system doesn't make much sense. Presumably, you are on an Android system because you didn't want/didn't want to pay for Apple. The sims and their data are controlled by the carrier, so take it up with them.
