The option to remove the status indicators has been removed, causing the watchface to be obscured with power save and phone disconnected icons 24/7, why was this feature removed????

I don't know what I'm looking at in your screenshots.  You don't show what settings you are in.  In relation to my other posts, I did not realize that I was not responding to you, the OP, and the other user did not bother to correct me.

I have a Watch 7 running OnUI8.0 and the Wear app version 2.2.65.25093061.  You are obviously using a different version of the wearable app and/or the Watch5 manager is different than the Watch7 manager.  These are my advanced settings in the Wear App and on my watch.  Option to remove the notification indicator is in the advanced settings of the *notifications*. Watch settings/notifications/advanced settings.

That is my advanced features tab on both wearable and on watch, I don't seem to have that option..

I see, wearable is from the play store/latest, same with watch 5, I'm guessing it's removed from watch 5 plugin for some reason.

Running

Wearable 2.2.65.25093061
Galaxy Watch5 Manager 2.2.12.25110651

I see, thank you so much! I am on latest wearable and watch 5 plugin, it seems there is also no advanced notification tab either, looks like it's the watch 5 plugin.

Updated OP with screens. Those were my advanced features settings you saw before.

On galaxy watch 5 pro neither in the wearable app on the phone or on the watch itself, does it show that setting.

Is your phone still on Android 13/OneUI5.0?

So, not a Samsung phone.  That is likely why you don't have the same settings screen in the wear app.  I believe they have different versions and settings for non-Samsung devices. However, the settings to remove the notification icon from the watch face should still be in the advanced settings of the notifications settings and the watch should still have the hide after 2 seconds setting. The screen shot you put up looks identical to the old settings screen in Android 14.

Samsung watches are made to best perform within the Samsung ecosystem.

That's where I'm frustrated, the setting is not there for me, yet I also cannot pair the watch to my galaxy tablet even though it has its own LTE plan to stay in the "ecosystem". Honestly it feels like a regression from when I had a S22 and GW4, just frustrating.

My understanding is that wearsbles cannot be paired with tablets.

Yeah they used to and now it does not, but I wanted to do the tablet initially so there was no missing settings/just use watch with LTE plan, but it's near impossible without pairing to a phone/using the qr esim test mode.
