Just updated my samsung watch fe to one ui 8 and the watch just became unusable for me. The primary purpose I bought the watch was to set timers and use stopwatch. But with current update, timers doesn't stay in grayscale mode on the watch. Neither does it work in nowbar as well with AOD turned on. Everytime I need to check the remaining time, I can't do it without touching the watch. God I so much hate it. Please bring back the old timer, the way it used to be.

Timers no longer stay visible while counting down.  You can do the following according to your preference:

1) Configure the now bar as icon + text.  This will put the bar across the 6:00 position and show you the running countdown.

2) Do what I did and add the timer as a complication to your watch face (provided you used a customizable watch face).  Tapping the complication will give you the option to set the timer length and show the countdown in the complication field.  I suggest that if you use this method you set the now bar option to icon only

Doesn't solve the issue. The timer on the complication field also gets stuck on the remaining time past the screen timeout time. This is pathetic. I don't know whose idea it was to implement these awesome features, but I'd appreciate it if I could dial back to the previous features or kindly fix this ASAP.

I'm sorry it does that for you.  For me it works perfectly, the time counts down even after the screen times out and I turn it back on.  Both with the now bar and with the complication.  Have you cleared your watch's cache partition?  There could be leftover temporary files bogging things up.  If clearing the cache does not work, put in an error report.  I thought you were complaining about the timer not taking over the full tile and going back to the watch face after the screen times out.

I hadn't cleared the cache partition earlier. After your comment, I cleared it, and that also didn't solve the issue. As soon as the watch display dims in AOD mode, the timer in the complication freezes.
