From this article, it looks like it might get UI 8, but we won't know officially until Samsung makes an announcement.

When Samsung opened the One UI 8 Watch Beta Program, it revealed that it would be open for the Galaxy Watch 5 and newer models in select markets. The company has now confirmed that the Galaxy Watch 4 and the Galaxy Watch 4 Classic will indeed get the One UI 8 Watch update. This should make Galaxy Watch 4 users happy

Yeah I hardly never trust tech sites about updates since they have been wrong so much lately. I can't stand when they say a update is going to be released on a certain day and the day comes and everyone starts posting here saying Samsung lied about the update being released when Samsung never gave a date for a release it was just a rumored date the sites make up to get clicks.
