I've been trying (unsuccessfully) to set up a HIIT workout on Samsung Health, and even though it shows times less than 5 minutes, it won't let you set anything lower than 5 minutes. I'm sure I can find a 3rd party app, but I find it very annoying that I can't do any type of interval training with the software that's actually designed for my sports watch.

The reason you cannot create a routine with a segment less than 5 minutes is because 5 minutes is the minimum.  The reason it shows you less than 5 minute increments is if you want to create a segment that is something like 1 hour, 3 minutes and 12 seconds.

A workaround might be to create your routine with no breaks, set each segment for 6 minutes - workout for 3 and break for the last 3.  Set your audio guide to advise you every minute.  Just a suggestion.  You can do an HIIT in 5 minute spurts with 2 minute breaks.  It will be just as effective.

True... That's a good workaround, but for this particular workout, my coach wanted me to do 2 on/1 off, so it's just a lot of fiddling with my watch rather than just focusing on my activity and listening for the beep

Do you keep your phone with  you during your workouts?  You could set a routine in modes and routines (routines do not work on the watch, but the notifications caused by the routines will). Not 100% sure it will work, but certainly worth a try. You would still have to dismiss the timer alarm from the watch, but that's just a finger flick.

I don't set them up through SHealth. I did create a custom workout though to just record them. There is a pretty good HIIT app I use which is called a Tabata timer. Theres a little bit of a learning curve with it but once you get it figured out you're good to go.

Oh and SHealth team, if you're reading this, y'all really need to work out all the kinks and issues. You all should probably get some iPhones and Apple watches to see how it's done. Just sayin'.
