Need help fixing REALLY annoying new "features"

I've got no idea what these things are called and I hope I'm posting it in the right spot and that it's not a duplicate. I got my Galaxy s25 ultra today. Upgraded from the s24 ultra, 23, 22 and note before that, so I'm a pretty dedicated Galaxy guy. I like the 25 ultra. But there are some things that, if they can't be changed or customized, might be a deal breaker for me and this thing might be going back. I'm not one of those people who plays 'that card'... But I have to admit a lot of my frustration stems from the fact I'm also disabled...muscle atrophy, radiculopathy and nerve damage severely impact my dexterity in my hands. Simply put, my hands are conditioned to do what I'm used to doing. A single swipe down.. Etc. Not two fingers. Not two swipes. Not from the top left or right. I just want it back the way it was.

The image with the 'gone gone' and the "x" is the best way of can explain it. I want that stuff gone. I don't want it need a brightness control there or a volume control and I cannot stand the 'play last song' stuff. How do I get rid of it. Just... Want it gone.

 The one where there's six icons/toggles etc circled. I want to edit those. Every prior phone I've had I've been able to change those. I want those to be what I want them to be... Do not disturb, is the big one. I don't want to have to swipe down twice or use two fingers to access a single button. How do I edit these? I can't find it in any setting.. This is from my 24. I just want my six chosen icons and my brightness bar there. Can I change these? I don't want to have to drag down twice and dig thru **bleep** to find them. I already found the "together' setting and that's not enough.

Next... How do I get the do not disturb icon (not the button... The status indicator) back on the left by the clock... See this? That's how my old phone was set up.

I'm going to stop there... Because I'm right want to sound like I'm whining or complaining too much. There's a real possibility that this stuff can be done and I just can't find it in the settings. I'll accept that if someone can show me how to do it. If these can't be fixed, this phone is going back. I I'm still not accept a phone that forces me to lose customization preferences just because someone in an office at Samsung or one UI or whoever feels this is 'better'. It might be for some.... But not for everyone. 

Anyone want to take a crack at helping the old guy with good reasons to have specific preferences ? I'd be greatly appreciative.
