my Samsung Galaxy s25 ultra phone has just in the last week been randomly saying "this print has already been registered please register a different print" even when my phone is in my pocket not being used. I checked for updates and restarted the phone and it's still happening

Not yet. I turned off fingerprint login and deleted all my prints and waiting to see if it happens again.

Looks like that didn't work. Even with fingerprints turned off and all deleted

First toggle off touch sensitivity and make sure Accidental touch protection is on; Settings/Display/Touch sensitivity and give that a try for a time.

If the fingerprint sensor is toggled to always be on, toggled it off, then see what happens.

If still, then go to Settings/Lock screen and AOD/Screen lock and biometrics (use PIN/password or pattern to open)/Fingerprints and toggle off Fingerprint always on. If that stops the fingerprint notification, then the sensor is possibly dirty or maybe the screen protector if one is being used, has something on/under it or has a minor flaw or minor spot, etc on it.

Also, see if there is an app named "Eufy" on the device and uninstall it. I remember reading a similar issue here last year, IIRC.

I have Eufy installed on my phone.  It's my app for my security system.  I can't delete it.  I've cleared the cache.  No difference.  The finger print message has now take the place of my camera notification.  There was an update to my home base on January  20.  My guess is that it has something to do with that.  Any thoughts?

Uninstall it. Unless the phone is a company/official device and that is not allowed. That very well could be the culprit.

I finally figure it out.  I  realized that I wasn't getting notification alert tone for a couple of my cameras.   I walked outside and stood in front of them and boom, I got the fingerprint message.  I went to another  one and got the message again.   I went to one more and I got a clanging fire alarm.  I checked  my Notification Alert tones and for every camera they had been reset to default.  Once I set them back to the original tones everything was fine.

Thanks for the original hint on Eufy,  Unfortunately I'll never get the 2 hours of my life back.  At my age,  each hour is precious.
