Samsung's default keyboard integrates with it Galaxy or AR emoji/avatar system, that is why it is possible with that. IIRC, that is done through the AR Zone function.
If you want Gboard or even Swiftkey keyboards, both integrate with the Bitmoji app to do the same thing.
