Does anyone know how to get me back to One UI 6 because I'm on the new One UI 7 version?

Sorry to hear you don't like 7.0 but they are no way to downgrade the OS back to 6.1

If this does not become an option or a classic UI 6 update I will be switching to another phone provider.

If you happen to find a way to downgrade you would lose all future updates since the instant you did a update it would go right back to 7.0

If your battery life is poor any update to software it sounds like the phone needs to relearn usage patterns again. There are a few things you can also try, refer to this link.

Not true. That does not undo firmware updates.

No factory reseting will not take the device back to the original software.
