The images look superb >>right from the camera ~!!     UNTIL we edit the images in the cell sft ??   Just a pixelated/ over-processed image ..falling apart before our eyes 🤔

How do we maintain the quality of the original photo ??   Only edit with Photoshop ??

On the S23, it is likely called intelligent optimization, because of the AI.  Either turn it off, or set it to the minimum.  Not having an S23, I cannot see what the setting shows.

YouTube is your best bet! I would search something like s23, s24, s25 camera tips and tricks. But do each search individually such as s23 camera tips and tricks.

Yes --  coming from DSLR days --  trying to get as close to a final at 50-75meg  >>> 300 dpi  ///  20+ inches X

Averaging well over 75 megs --once the image is imported into CS 4 ......loaded up to various sites @ 300 dpi   20+ X 20+  ........Printable  & decent for a contest /  show & tell  on line.

The files start out fairly large -- but once they are edited with the S 23 --seem to drop immensely  in size ?

You'd be surprised at just how much smaller an image file gets just by shaving a little bit off the edges.  It does not affect the quality or resolution of the image, it's just that there are so many pixels in that little shave that it drastically decreases the file size.  I almost always trim the edges, just to keep the file a reasonable size.  Other types of edits may also decrease file size as it may actually remove empty space between the pixels.

we always try to shoot full- frame --- no cropping and we place a white border around the final   --  just so many years that was a standard ... Maybe we load about 12+ up a day across the net .    Generally 60+ megs each
