Galaxy S23I don't have/ haven't had any issue with colors with the colors on my Samsung phones (or any phone for that matter). Are you sure you have your screen colors adjusted accordingly, adjusted the camera settings? Have you considered that for 27 years, perhaps your eyes' color vision has a deficit?

Questions aside, you can adjust your camera settings to your liking within the camera app. Exposure and saturation in particular will be important in achieving the desired color balance for your photos. You can even apply filters if you find those helpful. If the settings within the stock camera app are insufficient for your needs, Samsung also offers the Expert RAW camera app.

Have you adjusted scene optimization to minimal?
