Where do I go to change "Hey Google or OK Google"?

Open the Google app

Tap on your profile picture located on the upper right side of the screen

Tap settings

Select Google Assistant

Select voice match

If you were referring to how your Google assistant voice sounds, follow all of the steps, but instead of selecting voice match scroll further down until you see assistant voice

There is also a Google Assistant icon in the apps drawer where you can do the same thing.
