I do not understand why the developers think everyone wants their fonts to be a technicolir nightmare. After the last update, my phone now looks like a dog ate a box of Skittles and threw up. I just want ALL of my text to be simple plain dark black on a white background. Not grayed out, not blue or orange or (gah) pink. Messages are hard to read, even Facebleck posts have multiple colors. I am old, I am half blind, I just want solid black, dense, bold print.

Turn off the color palette in wallpaper and style.  If the palette is on, the colors will match the tones in your wallpaper.  I might add that many people actually like the fact that the text color changes with the palette they choose.

You have a slightly different version of issues I have with apps that refuse to go on dark mode. I have a light sensitivity in both eyes, which makes looking at white backgrounds absolutely migraine inducing for me. I always have dark mode on, and I have developer's options engaged on my phone to force dark mode. Even with dark mode forced, I have a number of apps that stay white backgrounded and I have messaged their developer's, and customer service asking them to make dark mode available again for those of us with visual issues.

If specific apps do not go into dark mode, it's because the developers of those apps have not allowed it.  Amazon and Facebook, for two, do not allow dark mode.  You can mitigate this by putting a color filter over your phone when using the app to lessen the glare.  You can do this manually or create a routine to automate it so that when you open those specific apps the color filter will go  on. Go to accessibility settings, vision enhancements, choose color filter and add the color filter shortcut to your quick panel for easy manual activation.  Choose the color overlay you want and the transparency factor.  Once you set the color and the opacity most comfortable for you, every time it's activated it will be the same. You can change the color and transparency at any time.

 

You can also force color inversion in the accessibility settings but, while that will give you white text on a black background, all the colors will be like looking at a photo negative.  You can also turn on extra dim.  Play with the accessibility settings to find the effect that's right for you.
