Emojis changed colors and can't find a way to change them how they were Galaxy S10E

S10e....All my icoms (body parts, thumbs up, praying hands, etc.) are black all of a sudden! Nothing in Notices...is this for Black History Month? Can't find a way to change them back to white, and now my screen background is stuck in dark mode. Can someone help please?

If you hold on them can you select different colors?
