Why is my brand new note 20 ultra keep freezing?

The Note 20 Ultra was released 5 years ago. Its tech isn't exactly current.

How does the device keep freezing? Does any particular action (web browsing, watching videos, playing games, etc) initiate this behavior?

It could be that the Note 20 was released 5 years ago and if you just purchased it,  it’s mostly likely a refurbished device that the seller is saying is new when in fact it’s really a refurbished device.  Apps and everything now requires more resources to run so it’s not able to handle it all.  You could try Wiping the Cache Partition to see if that helps but it will continue to slow down the older it gets. 

Detailed Steps:
  1. Power off the device: Ensure your Note 20 is completely turned off. 
     
  2. Enter recovery mode: Press and hold the Volume Up and Power buttons at the same time. 
     
  3. Navigate to "wipe cache partition": Use the Volume Up and Down buttons to navigate the recovery menu and highlight "wipe cache partition". 
     
  4. Select "wipe cache partition": Press the Power button to select the highlighted option. 
     
  5. Confirm the action: Use the Volume Down button to highlight "Yes" and press the Power button to confirm. 
     
  6. Reboot the device: Once the cache is wiped, the menu will reappear. Select "Reboot system now" and press the Power button to restart the phone.

While it might be brand new to you, it is 5yrs old.

It doesn't have enough RAM to run smoothly anymore because apps are bigger take more RAM.

Try not to have many apps running in the background.
