Samsung uses your DOB to verify that you are the age of majority in your region. Minors 13 and under fall under different regulatory requirements and certain features/services must be restricted.

It still displays under "profile info" on the device. OP's concern seems to be that anyone who finds the device can see the user's birthday. Hence my comment about protecting it with a device lock.

Bank i believe require birthday etc as even getting a library card your phone security is a issue you need to decide
