Do you mean like a link to the email? Are you talking about something like where in Gmail you can click the three dots and add to tasks? Is this for mobile devices? I know one solution would be to access the email from a browser and then copy the URL and put that in your notes. If you are having a hard time getting to your email in a browser then go to whatever email app you use in the settings and turn off the option where that associated link opens the app instead of the website.
