My Xcover6 Pro Sm-G736U has Android 16 and One UI version 8.0

I just purchased a SM-G736U/DS. When I go into Software Information, it shows Android 13 and One UI 5.1. When I click on the Software Update , I get the message "your software is up to date". 

Can someone tell me why it won't update or how to update the software?

Where did you buy your phone? Who's your carrier?

Both phones were purchased through Amazon renewed program. A couple months apart. They came from different vendors, both in the US.

It appears your phone was originally carrier-locked to Verizon and it's looking for updates from Verizon servers. Return the phone if you can and look for one that's factory unlocked (model name ends in U1). If it's no longer returnable, your options are:

1. If you have access to a computer, try using Smart Switch to see if you can get updates.

2. Temporarily install a Verizon SIM (it doesn't have to be active) to get updates. You will have to do this every time there's an update.

3. Take your phone to an authorized service center to have them flash unlocked firmware. There will be a fee for this service, but it will allow you to get OTA updates regardless of which carrier's SIM is installed. See this link to find a location near you:

Well, I noticed that under the Service Provider Software Version, the model number in the firmware is SM-F711U. Am I reading that correctly? 

My Xcover6, that is working fine, shows SM-G736U in the Service Provider Software Version.

You're absolutely right. I didn't even catch that. In addition to it originally being a Verizon device, somebody flashed the wrong device firmware to your phone. You'll have to take it to a service center to have that problem fixed, unless you can return it. If that's still an option, I highly recommend returning it.

If you buy a new one, make sure it's a U1 device, as I indicated above. Maybe try Swappa instead of Amazon Renewed. "Renewed" devices from Amazon are known for these kinds of issues.
