Galaxy WatchIt depends on your watch version and where your model is on the rollout schedule. Even if you were in the beta and left it, you will still get the update when it's your turn. You are not penalized for backing out.

Galaxy WatchOne UI8 turned my GW7U from the MOST accurate pool swim length tracker, to a glorified piece of junk. Over-counting my laps by 15-20 now, making it inaccurate for everything health-related. Wrong swim distance, wrong length count, wrong calories burned, wrong stroke types, wrong "rest" periods (I take none, but the watch counts several).
This experience has taught me to turn auto-updates OFF, and leave well enough alone. Was the update worth the pretty tiles at the expense of sensor accuracy, which affects EVERY health aspect of the watch? No. So think carefully before you update.
