Coincidentally, I was just wondering the same thing this morning, but not because I want it so much, but because I am having minor issues with my watch not being recognized within certain Samsung apps and features (find, health monitor), and was wondering whether not having the update was because of these issues.  I was going to reset my watch, but the issues are so minor as to not make it worth it yet. I was hoping the update would fix it, but if the update is being hung up *because* of these issues, I'm going to have to do it.  It's reassuring to me, in that regard,  that others have not gotten it yet either.

When is the galaxy watch 7 getting the stable version of one ui8

It was rumored to start getting it on Sept 30 do you have a LTE or Bluetooth model so it should be soon.  But we don't have any exact dates just rumors.
