Every time I hit the microphone button I get a ding or some annoying sound how do I turn that crazy thing off

That sound is there to let you know you activated the microphone, accidentally or on purpose. If it was accidental, you know to turn it off. If it was on purpose, you know it's functioning. You can turn it off or lower the volume by turning down the volume on system sounds, but you will get no system sounds at all if you do that. Best just to lower the volume.
