Galaxy S25This has been that way going back to the S21 from my experience, so I am thinking this is by design. There is limited linear space in the status bar as it is. There is also a limitation for notifications to 3 app icons being in the status bar at the same time, everything else is shown as a dot (meaning more notifications). One can always place a clock widget on their home screen/Lock screen/AOD shown in digits with seconds being displayed. It would also be easier to see.

Galaxy S25You can download Good Lock/QuickStar, clock settings to show seconds on the quick panel clock (the one when you slide down the shade), but that still gives you the "hands full" problem. But at least you'll be able to check the seconds when your lock screen is not on. There may be some third-party clocks in the Play or Galaxy store that allow seconds. I glanced at some analog and digital clocks that had seconds. Search for "clock" or "clock widget"

Galaxy S25If you use Good Lock's Lock Star, there's an analog clock widget you can add to the AOD with a second hand (I assume it actually sweeps the seconds). That is, if you actually use the AOD.
If you also have a watch paired with your phone, you can use the studio tab in the Clock Face module to add a watch plug in to use a watch face from your watch - if you select a face with seconds, you can add that as a clock to your lock screen. I don't think you have to use the same face currently on your watch, but you certainly can make them match if you want.
