I just got the s25 ultra, my google messages was working fine with RCS. My curious mind decided to download Samsung messages and give it a try. Well now my RCS on google messages says NOT SUPPORTED. I have tried several things and have not figured it out. Any help?? I've tried clearing the cache, restarted phone from factory, uninstalling app.

Yes, unfortunately I did. I have deleted Samsung messages & did a few steps already but everything i tried has given me the same not supported message within minutes of turning the RCS back on using google messages.

Very easy to fix if you want to switch back to Google messages go in settings than apps scroll down to Google messages tap it and set to default

Samsung and rcs seems dependant on carrier

You might try refreshing Google Messages by clearing the app's cache AND data and then reconfiguring Google Messages. You can try uninstalling and reinstalling Google Messages (but clearing the data mostly does the same thing). If your phone did not yet back up since you made this change, you can restore your backup.

I tried clearing cache & data, I Uninstalled updates within the settings app as well, I've turned phone off and on (several times), I've even factory reset my phone 🫠. Each time rcs will tell me it's "setting up" & then it'll eventually go back to not supported. So I'm at a lost. I have also deleted the samsungs messaging app off phone and ensured google messages was my default app.

Since RCS is carrier dependent, you should probably get in touch with your carrier's tech support department.  Not customer service - ask specifically for tech support.  Who is your carrier?
