Why did Samsung remove the pulse feature etc on the phone? Some of us still like to record this data and not pay a Grand for the watch! Similar to Microsoft force us to buy a new computer!!

Well, if you still have your S10+, you can still use it for that purpose. You have an S25 now, and you cannot.
