Do you have a carrier device?

Have you switched carriers since your last update?

Have you tried to use Smart Switch on a computer to look for an update?

Im having the same problem , I am using a different carrier but I thought, since my model number ends with U it means it's unlocked and it's a US phone.. is that true? I should have one UI 7 by now!

Factory unlocked phones end in U1. If you have a carrier phone, had it unlocked and changed carriers, you will need to either obtain a SIM (active or not) from the original carrier to try to get the update or, if you have a computer, connect your phone to the computer, download Smart Switch for computer and look for the update. I think that if you are near a uBreakiFix location, they might be able to do it
