So recently online I saw this video of a new beta update with a new feature called, "Display Theme" and It turns from the old one ui to a liquid glass ui, and I don't know if this is true or not, can somebody back me up?
You probably saw a video of a leaked One UI 8.5 developer build. It's most definitely not a beta. If there is a beta at some point, it will likely be for S25 devices only.
