Where did the message notification setting go?

I have a s23 ultra and at some point the ability to set the default notification sound disappeared. I cannot set the default in Google Messages or Samsung Messages app. I can set a notification for each text message, but that isnt want I am looking for. I can set a notification sound but that is for notifications in general. I am looking to specifically set a tone for text messages. Anyone have any idea where that went?

Categories for Each App" On

Change Notification
Sound for Each App:

•  Settings  >
•  Apps  >
•  Choose App  >
•  Notifications  >
•  Allow Notifications Must be On  >
•  Notification  Categories  >
•  Click on a Category  >
•  Sound  >
•  Choose a Notification Sound.

With UI 6.1, Notification Categories for Each App is off by default.

I prefer using these steps I posted as it works the same for any app.

All my contacts and phone numbers are blocked, but when I go to settings, it says nothing is blocked.
