When I go to my Google photos app and click on the settings after I click on preference then to photo view and finally click on customize by app. There are 3 sections that say unknown app. What does that mean?

The entries you see in Google Photos, such as

(com.samsung.android.app.smartcapture)

(com.samsung.android.messaging)

(com.sec.android.mimage.photoretouching)

refer to legitimate, pre-installed Samsung system apps.

Google Photos displays them as "Unknown App" because it doesn't recognize their specific package names as standard Google apps, but merely identifies that images are being generated or stored by these applications on your device.

Because you are looking at cusromize by app, which means how to hadle photos from particular apps. If Google does not know which app the photo came from, it will say unknown app. For instance, your first example says smart capture, which means its a screen shot, but there is no actual app. The unknown app designation just means the image is not associated with an app. The parenthetical descriptor tells you where the image originated from. It's not anything to be concerned about.
