Question about taking notes with the Ultra 25

I'm fairly new to the Samsung world, so excuse me if this is a stupid question.

I've seen videos of people taking notes using the S Pen and it'll automatically transform the words into a text format. I can't for the life of me figure out how to do it. Is there a certain app I need?

Any advice is greatly appreciated, thank you.

For Samsung Notes:
Open the note app.
At the bottom, slide left until you see the icon shown in the picture below.
For other use:
On the keyboard, select handwriting.
Just press on the icon.

Oddly, my Notes on my Z Fold 7 with One UI 8 does not have that option in the Notes toolbar. I have to use the Samsung keyboard.

My version is 4.4.32.451754321409752.jpg

I think it's because the Z Fold 7 doesn't support the S Pen, maybe? But I will take a look at the Z Fold 7 tonight when I get back.
And my S25 Ultra note version is 4.4.29.23.
An older version, huh?

@Dan2023 On the Fold 7, after writing the text you need to click this icon.

Then choose Convert to text.

Then you can copy it and paste it anywhere.
