Notes Widget not Showing Preview

When you go to set the notes widget in the home screen, it dies not preview the widget at all.

As @THE GEEK 19 mentioned, this maybe a temporary optimization issue for your device configuration. 

However, if the issue persists after waiting for some time, please submit your error report via Samsung members:

Samsung Members > One UI Beta Program > Beta feedback (Screenshots would be very helpful)
