If you download the Google Clock, you can. It's in Display, then screen saver.

Your post saved me from going completely crazy.  I could not figure out why all of a sudden the CLOCK option was missing from Screen Saver setting.  I deleted the Google Clock app from my phone because I did not see the need to have two clocks apps on my S25 and did not realize the Google clock was what was used as the Screen Saver option.

I recognized the deleted clock icon in your screen shot above.
