These are very minor issues, and perhaps no one else even notices them, but they do bother me, and I'd like to see them fixed at some point. I love One UI and I want to see it reach its full potential! If you're on theOne UI 8 Beta, please let me know if these issues are fixed in that version, if you can. Thanks!
1 • The first issue is with folders.
Folders can neither be colored nor can their icons be made transparent when not using the default icon pack.

2 • The second issue is with the animation for closing apps (and opening them, but the latter is much less noticeable in real time).
When the default icon pack is applied, the shape of your screen properly transforms to that of the app icon as it shrinks when closing an app. This shape transformation also applies to opening an app. However, when you have a different icon pack applied, the screen instead simply fades out and the icon fades in, with no transition in the shape of either. Since the icon appears at the top of the shrinking screen, this creates an effect that makes it look like the icon is falling from further above, rather than the screen and icon being two forms of the same object.This also applies for icon packs that use the standard squircle shape, so it doesn't matter how you change the icons for this to occur. It can also be seen in the animation for pressing the home button/using swipe from bottom gestures.

I'd like to see proper transformation be implemented for the basic icon shapes (circle, rounded square, teardrop, etc), but I know this requires extra effort. However, I think the fade animation could be considerably improved as well, such as by centering the icon.
