supposedly hasn't it already been out as flip devices also supposedly have had it released? Don't know if the watch beta forum will get you and answer but it may go to stable without a beta as not all devices get betas, especially when closely related or similar...

S24 Ultra (Unlocked models) is currently undergoing One UI 8 Beta at the moment. 

Once the Beta is over, official version will gradually release to other models as well.
