Galaxy WatchIt looks like you are a very restless sleeper. It could be that during that period of time your brain is asleep, but the watch is not detecting that your body is asleep due to your HR and respiration not going low enough to register as sleep - or it's going too low and not registering as alive. if you have ever worn your watch under anesthesia, you would see you'd get the same type of result, as an anesthetized state does not register as a sleep state. When you say you have tried all the fixes and tips, what does that mean? Is your watch too loose? Have you turned sleep mode on so your watch is not constantly waking? If you have had every watch, and it shows the same type of sleep tracking, I'd say it's your body, not the watches. I think a sleep study may be in order for you.
